    Zesty Delights: Lemon-Garlic Roasted Chicken – A Festival of Flavor

    Introducing Day 3 of our “Zesty Delights: A Week of Lemon Recipes” series! As we gear up for The Goleta Lemon Festival, we’re bringing you a daily dose of citrus-infused goodness.

    Today’s recipe is a tantalizing blend of lemon and garlic-infused chicken, guaranteed to brighten your taste buds and get you in the lemony spirit. Get ready to zest up your day with our flavorful Lemon-Garlic Roasted Chicken!

    Lemon-Garlic Roasted Chicken

    Ingredients:

    • 1 whole chicken (about 4-5 pounds)
    • 4 cloves garlic, minced
    • 2 lemons, zested and juiced
    • 2 tablespoons olive oil
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 teaspoon dried oregano
    • 1 teaspoon dried thyme
    • Fresh rosemary and thyme sprigs (optional)
    • Lemon slices for garnish (optional)

    Instructions:

    1. Preheat your oven to 375°F (190°C).
    2. Rinse the chicken inside and out under cold running water, then pat it dry with paper towels.
    3. In a small bowl, combine the minced garlic, lemon zest, lemon juice, olive oil, salt, pepper, oregano, and thyme to make the marinade.
    4. Place the chicken in a roasting pan or a baking dish. Gently loosen the skin over the chicken breasts and thighs using your fingers, being careful not to tear the skin.
    5. Pour about two-thirds of the marinade mixture under the chicken skin, spreading it evenly.
    6. Rub the remaining marinade all over the outside of the chicken.
    7. If desired, stuff the cavity of the chicken with fresh rosemary, thyme sprigs, and lemon slices.
    8. Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C). If the skin starts to brown too quickly, you can tent it with aluminum foil.
    9. Once done, remove the chicken from the oven and let it rest for about 10 minutes before carving.
    10. Serve the Lemon-Garlic Roasted Chicken with your favorite side dishes. Enjoy!
